This recipe was provided by CAN Board member, Resina. She says: “Spicy aubergine fritters are a popular Bengali snack. While aubergine is usually used to make them, you can use up any excess batter with sliced courgette too.”
Ingredients
- 1 aubergine
- 150g flour
- Around 75ml water, or enoughto make a batter
- Half a tsp of chilli powder
- Half a tsp of turmeric
- Half a tsp of baking powder
- 1 tsp of coriander powder
- 2 tsp of onion seeds
- Vegetable oil
- Salt to taste
Method
- Slice the aubergine to 1cm thickness.
- Make the batter by mixing all the dry ingredients with the water.
- Dip the aubergine slices in the batter, ensuring they are well coated.
- Fry the aubergine slices in hot vegetable oil until golden brown on both sides.
- Serve hot. The beguni can be eaten alone, or served with ketchup or a mint and yogurt dip.
